This recipe is simple to make and only has 4 ingredients! The end product will be a chunky strawberry jam! Add this jam to a peanut butter wrap for snacking. We recommend using this jam only on the first 2 or 3 days of a backpacking trip. Any longer than that is not recommended because the jam needs to stay refrigerated for freshness.
Tasty tips for home: At home this jam is a delicious topping on toast, pancakes, greek yogurt, ice cream, or as a spoonful on it’s own!
Ingredients
- 3 cups strawberries (fresh or thawed if frozen)
- 4 tbsp chia seed
- 4 tbsp honey
- Optional: splash of lemon juice
Directions
- In a large pot, heat the strawberries over medium heat. Strawberries will begin to soften.
- Add honey once strawberries are softened and juices start to bubble.
- As the honey and strawberries mix together, use a masher to mash up the strawberries.
- Let mixture come to a slow boil. Once bubbles start to break the surface, add the chia seeds. Chia seeds will begin to bind all of the ingredients together.
- Heat the ingredients over the stove for another 15-20 minutes stirring often.
- Add a splash of lemon juice if you choose (this is not necessary but if used will add some flavor to your jam).
- Transfer jam to a mason jar, let cool, seal the lid, and refrigerate for up to 1 month.
