Cheap and Healthy Beef & Vegetable Ramen Soup

Ingredients (makes 2 servings)

Preparation at Home

  1. If you elect to dehydrate your own vegetables, we recommend using frozen veggies. Dehydrate in the oven or dehydrator at 135° F for 4-5 hours.
    • Note that time depends on the type of vegetable you are doing. We usually do a mixed bag and 5 hours is sufficient to dehydrate the variety of shapes/sizes of vegetables. The Nesco brand dehydrator works well and is reasonable in price. You can also buy extra trays if you want to dehydrate large quantities at once. 
  2. Vacuum seal vegetables and freeze or refrigerate until use. ( ½ cup of dehydrated vegetables is plenty for 1 person)
    • Ziploc bags would work too but won’t keep the dehydrated vegetables fresh for as long. If you plan on using the batch within a few days, a ziplock bag is ok. We like to make a large quantity, so a vacuum sealer is needed to seal in the freshness. We like to get our refill bags for the vacuum sealer from Costco, and once in a while, they go on sale for $10 off!
  3. Gather ramen noodles and seal in a ziplock bag (1 ramen square per person is sufficient). 
  4. Gather enough flavor for your soup and seal in a ziplock bag.
    • If you want a different flavor, replace beef bouillon with your preferred seasoning. Use whatever your taste buds desire! 

Cooking at Camp

  1. Boil water.
  2. Stir in dehydrated vegetables and bouillon. Cover and boil, stirring occasionally, for 10 minutes or until the vegetables appear full in size again.
  3. Add noodles to boil, stirring occasionally, until noodles appear soft (about 2 minutes).
  4. Pour into cups for all campers to enjoy the delicious easy to make soup!
